DAVE CASTILLO

With 22 years of experience in the bar/restaurant industry, Dave Castillo has been tending bar for about eighteen years, became a sommelier in 2008, and delved into the classic cocktail scene in 2009 when he went to work with Jason Schiffer at 320 Main in Seal Beach. Dave has spent the last five+ years managing the bar at Workshop Kitchen+Bar with his partner in life Michelle Bearden, and now manages Workshop’s sister bar, Truss & Twine, where drinks are divided into categories such as Golden Age and Prohibition. “The Cosmopolitan is in the ‘Dark Ages’ section,” says Dave. “But with the help of a beautiful lime cordial, ours is balanced and nuanced, while hitting all the flavors and paying homage to a hugely popular cocktail of the time.”

LIME CORDIAL
In a medium saucepan, combine 2 1/2 cups of fresh lime juice (reserving the zest from 2 limes) with 3 1/2 cups of white sugar and bring to a boil. Remove from heat and let cool for 5 minutes, then add the lime zest and 2 oz. of minced ginger. Steep the mixture for 15 minutes, then strain it through a fine-mesh strainer; bottle the cordial and keep it refrigerated for up to 2 months.

TRUSS & TWINE'S COSMOPOLITAN
Add 2 oz. of vodka, 3/4 oz. of lime cordial, 3/4 oz. of cranberry juice cocktail (such as Ocean Spray) and 1/2 oz. of fresh lime juice to an ice-filled shaker. Shake and double strain the cocktail into a chilled coupe, then garnish with an orange twist.
